Just wanted to add that I use good apples for this recipe. I used 2 large Fugi apples (sweet juicy ones) and one Granny Smith. Plus, if you have the salsa maker thingy that has the thing you turn on the top that chops the veggies....that grates apples perfect - clear as mud?

I actually was just thinking about this recipe yesterday. I love these muffins. I'm planning on making these for my MIL's birthday breakfast next weekend.
Would you quit putting yummy recipes on your blog! I always read them and want to immediately go to the store and buy the ingredients and I'm trying to count WW points. Not so good for the counting!!!!!
